Nigerian chef Hilda Baci has been recognised for cooking the largest meal of jollof rice ever.

The Guinness World Records said on Monday that Baci's meal, which was cooked in Nigeria's commercial city, Lagos, on September 12, weighed 8,780 kilogrammes.

At least 168 kilogrammes of goat meat were used in the cooking.

"Nigerian chef Hilda Baci has made her way back into the record books after kick-starting record fever across Africa," Guinness World Records said in a post on Instagram.

Nine hours of cooking

Alongside brand Gino Nigeria, Hilda cooked up the largest serving of Nigerian style jollof rice, Guinness World Records added. Ten other chefs assisted Baci to set the world record.

According to Baci, 28, it took "nine hours of fire, passion, and teamwork" and 1,200 kilogrammes of gas to create the 16,600 plates of rice "served with joy, love and community."

After the large meal was ready, it was served to people in Victoria Island, the cooking venue.

Jollof rice is a popular dish in West Africa. Generally, it is made with rice, tomatoes, and a variety of spices. On most occasions, it is paired with meat or seafood.

‘Brand new record’

The meal's ingredients and preparation procedure may vary from country to country.

In May 2023, Baci bagged a Guinness World Record for the longest cooking session, which lasted 93 hours and 11 minutes.

She was, however, later surpassed by Irish chef Alan Fisher, who cooked for 119 hours and 57 minutes in November 2023.

The current record-holder is Australia's Evette Quoibia, who cooked for 140 hours and 11 minutes in May 2025.

"So this is a brand new record. So this hasn't been attempted before with a total of 8780 kg. Hilda Bassey and Gino, you are the world record holders for the largest serving of Nigerian-style jollof rice. Congratulations," a Guinness World Records official said in a video call with the Nigerian chef, announcing the decision, on Monday.
